‘Maca-nilla Chia Pudding' Recipe

This simple chia pudding is rich in vanilla flavor, and very creamy thanks to the cashew milk. Maca adds even more minerals and boosts your stamina.

Ingredients (serves 2)

  • 1/2 cup really raw cashews

  • 1 1/2 cup water

  • 1 tsp maca

  • 1 inch vanilla bean

  • 4 Tbsp chia seeds

Directions

  • Blend the water, cashews, maca and vanilla bean until smooth, about 1 minute.

  • Pour the liquid into a bowl, add the chia seeds and stir with a fork until well mixed.

  • Set aside for about 20 minutes and enjoy, or refrigerate.
