'Almond Cup Cacao-Chia Pudding' Recipe

Pudding photo by RBerteigWhen you want a quick and easy breakfast that packs a lot of nutrition, chia seed recipes cover all of the bases. With more protein, calcium, iron and antioxidants than a traditional cooked breakfast, chia puddings are nutritional and a breeze to make. You can even let the little seeds soak in the chocolate almond milk while you’re on your way to work, or prepare the pudding the day before!

Ingredients (serves 1)

  • 1/4 cup almonds, soaked for about 6 hours

  • 3/4 cup water

  • 2 Tbsp agave nectar, or more to taste

  • 2 Tbsp raw cacao powder

  • Small piece of vanilla bean

  • 2 Tbsp chia seeds

Directions

  • Make almond milk by blending the almonds with the water, and strain the liquid to remove the fiber. A nut-milk bag works great for this.

  • Blend the almond milk with agave nectar, cacao and vanilla.

  • Stir in the chia seeds, and drink right away or set aside to thicken for about 20 minutes, stirring two or three times.
