Growing Pineapple photo by Courtney BoydstonWhat do you do when you don't have a big variety on hand but still want to impress? The answer is this quick and easy—yet delightful—green smoothie. The pineapple is so intensely sweet and tangy that greens go nearly unnoticed. I often used to make a single batch and consume it all myself during busy work days. Makes about 4 cups.

Ingredients (serves 2)

  • 1 pineapple, peeled and diced (about 16 oz)
  • 3 cups leafy greens, such as spinach
  • 2 large bananas, frozen
  • Water to taste

Directions
Blend all the ingredients together until smooth. Pour into two 20 oz glasses and enjoy.

Eco Tip

Lower your thermostat temperature in winter and raise it in summer. In winter, set your thermostat to 68 degrees or less during the day (and wear a sweater) and 55 degrees or less at night (and add an extra blanket). Wear less or use a fan instead of air-conditioning on all but the hottest summer days. When you must use air-conditioning, set your thermostat to 78 degrees or more.  More tips...
